I made some cordial last summer with plums and apples – but then I saw this blog post early in July. It is a gooseberry cordial! I immediately went home to my parents and robbed their gooseberry bush.
(I asked first. Or maybe said – I will drop by to get your gooseberries. Either way, I informed.)
The difference from last summer, I had less berries so I didn’t bother bringing the steamer to make this. That means, it is a simpler and easier process. And less to clean up.
750 g green/yellow gooseberries.
400 ml water
300 g sugar
1. Put the gooseberries and water into a pot on the stove.
2. Bring it to a boil, and let it simmer for 20-30 minutes, until the berries are squishy.
3. Add a sieve to another pot, and put a cheese cloth (or another kind of clean kitchen towel) inside it.
4. Pour the gooseberries and water over the cheese cloth and let it drain for an hour.
5. Squash the gooseberries against the cheese cloth, over the pot, to drain the juices completely.
6. Put the pot back on the stove. Add the sugar and the juice of ½ lemon.
7. Bring to boil.
8. Add the rest of the lemon juice according to taste.
9. Pour the cordial into clean bottles.
Keep it cool in the fridge, if you want to drink it within a set period of time. Mix 1 part cordial to 2 parts water.
